Tiffin Room at Raffles Hotel Singapore presents an exquisite gastronomic collaboration with Indian Accent (New Delhi), an acclaimed pioneer in contemporary Indian cuisine, from 22 to 24 May 2025. This three-night culinary affair brings together Chef de Cuisine Kuldeep Negi and Indian Accent’s Executive Chef Shantanu Mehrotra for a tasting menu that marries innovation with tradition.
Celebrated for its bold reinterpretations of Indian classics, Indian Accent joins forces with Tiffin Room to reimagine beloved dishes through the lens of fine dining. Diners can expect an artful symphony of flavours in both vegetarian and non-vegetarian tasting menus, showcasing inventive techniques and seasonal ingredients.
The journey begins with elegant street-style bites such as Tiffin Room’s Basil Tart and Indian Accent’s Black Garlic Dhokla, followed by indulgent appetisers like Malai Chicken with truffle shavings. A tangy Kaccha Aam Jeera Sorbet cleanses the palate in preparation for the star attraction: tiffin boxes brimming with culinary gems.
Signature dishes include John Dory in coconut curry espuma, Braised Lamb Shank in prune-mulberry korma, and the iconic Black Dairy Dal. Vegetarian diners are treated to vibrant options like Angara Paneer and Green Jackfruit in smoked chilli curry. Richly layered biryanis and house-made kulchas further elevate the experience.
Desserts delight with a modern touch – from Rasmalai Cheesecake to Dodha Burfi Treacle Tart and Mishti Doi Cannoli. A curated wine pairing by the in-house sommelier enhances this singular dining experience. This exclusive dinner is priced at S$168++ per guest, with optional wine pairing at S$98++.
