Singapore’s dining scene continues to evolve with the introduction of five exciting, diverse additions in the final half of 2024: Mami’s Tamales, Estiatorio Milos, Sospiri, Chandu at The Robertson House and Christina’s at Mondrian Duxton. Bringing Mexico to Keong Saik

Opened by the same folks behind Papi’s Tacos from SJS Group, is Mami’s Tamales. They have launched Asia’s first tamale pop-up in Singapore, blending traditional Mexican flavors with Asian influences.

Located on Keong Saik Road, this vibrant eatery offers an array of tamales, including Chicken Tinga and Ayam Sambal Hijau, alongside Mexican-inspired starters and indulgent desserts. The lively atmosphere and authentic Mexican artwork make it a must-visit spot for foodies.

Greek Elegance at Marina Bay Sands

Estiatorio Milos, an internationally renowned Greek restaurant which has gained popularity in New York, has opened its latest location at Marina Bay Sands. Founded by Chef Costas Spiliadis, this elegant venue features standout dishes like the Milos Special, a visually stunning tower of crispy zucchini and eggplant, and the Tomato Salad, which showcases the simplicity and freshness of Greek produce.

Other highlights include Whole Fish Baked in Sea Salt, Lobster Pasta Athenian-Style and Mediterranean Octopus chargrilled to perfection. For those seeking a taste of history, the Avgotaraho, an ancient Greek delicacy, offers a unique culinary journey. For a modern twist, dishes like Whole Fish Sashimi and Greek Ceviche blend traditional flavors with contemporary techniques, perfect for those looking to explore the versatility of Greek cuisine.

With the most extensive selection of Greek wines in Singapore, Milos offers a refined dining experience that captures the essence of the Mediterranean coast.

Southern Italian Flavors with a View

Opened since 1 July 2024, Sospiri is the latest and highly anticipated venture by ilLido Group, located on the 7th floor of IOI Central Boulevard Towers.

Helmed by Michelin-starred Chef Matteo Ponti, it offers authentic Southern Italian cuisine, featuring dishes made from the freshest ingredients, such as ripe tomatoes, wild vegetables, and tender artichokes. Signature handmade pastas like Pappardelle con Funghi e Bottarga, Fettuccine con la ‘Nduja, Spaghetti di Gragnano alla Colatura di Alici, and Tagliolini al Nero di Seppia are perfect for sharing among family and friends.

The restaurant also features a rooftop bar with panoramic views, a great choice for social drinks and corporate entertaining. With curated lunch sets, special occasion dinners and weekend brunches, Sospiri is poised to become your next favourite dining destination.

Sophisticated Speakeasy

Chandu, a speakeasy bar by The Robertson House in Singapore, has appointed Karlo Torres as its new Head Mixologist. 

With a background in culinary arts and experience at venues like The Spot and Raffles Hotel Singapore, Torres brings a unique blend of Japanese precision and American bar culture to his mixology. His innovative approach includes experimenting with techniques like fermentation and repurposing ingredients for sustainability. 

Under his direction, Chandu aims to be a top cocktail destination, offering a refined menu of reimagined classics and original creations inspired by Torres’ diverse culinary experiences.

Historic Charm Fused with Modern Luxury

Fusing modern luxury with historic charm, the first Mondrian in Singapore at Duxton Hill offers a unique blend of art, culture and design, creating an immersive experience for guests.

The hotel is known for its bold, artistic interiors and life-sized giant Kaws sculpture that showcase a mix of contemporary heritage elements, reflecting the rich cultural tapestry of the surrounding, quaint Chinatown neighborhood.

As Chef Kenny Huang prepared the new menu for Christina’s, he couldn’t help but be transported back to his childhood, where the aroma of spices and the warmth of family gatherings filled the air. Growing up in Singapore, Chef Kenny was surrounded by a rich tapestry of flavors, thanks to his family’s unique history. His grandfather was a fisherman in the waters around Malaysia, while his father cooked aboard an oil rig, traveling the globe from the Indian Ocean to Europe and Brazil.

Chef Kenny recalls how his father’s journeys were more than just professional—they were culinary adventures that brought the world home. “My father would bring back spices and sweets from his adventures cooking for the rig crews around the world, and we would gather friends and family for barbecues that exploded with a fusion of these flavors and our local ingredients,” Chef Kenny reflects. “I found myself reflecting on these memories when working on the recipes for this menu.”
